  2. 2. Peel the eggs and cut them in half.
  3. 3. Separate the yolks from the whites and use the yolks for another purpose.
  4. 4. Finely chop the egg whites together with the pickles and capers.
  5. 5. Mix the mayonnaise with the chopped egg whites, pickles, capers, and shallot.
  6. 6. Season the sauce with one to two tablespoons of pickle juice, salt, and pepper.
  7. 7. Peel the garlic and press it directly into the sauce.
  8. 8. Stir the chives into the sauce and taste to see if it is well seasoned.
  9. 9. Wash the salad and shake it dry.
  10. 10. Tear the salad into small pieces if it is too large.
  11. 11. Wash the radishes and remove the stems.
  12. 12. Slice the radishes into thin slices.
  13. 13. Peel the onion and cut it into thin rings.
  14. 14. Peel the shallot and chop it finely.
  15. 15. Put the raw beef, lemon zest, mustard, salt, and pepper into a bowl.
  16. 16. Knead the meat mixture well.

  20. 20. Place the salad on the bottom half of the buns.

  24. 24. Drizzle a little ketchup over the burgers.
  25. 25. Place the top half of the bun on it.
  26. 26. Serve the burgers immediately.
