🍽️ Raw Beef Burgers with Homemade Tartar Sauce

Ingredients
- 4 lettuce leaves (e.g. endive)
- 8 radishes
- 1 red onion
- 1 shallot
- 500 g beef tartare
- 1 pinch lemon zest (organic)
- 1 tsp hot mustard
- salt
- pepper (from the mill)
- 4 sunflower seed rolls
- 4 tbsp ketchup
Instructions
- 1. Peel the shallot and dice it into fine cubes.
- 2. Peel the eggs and cut them in half.
- 3. Separate the yolks from the whites and use the yolks for another purpose.
- 4. Finely chop the egg whites together with the pickles and capers.
- 5. Mix the mayonnaise with the chopped egg whites, pickles, capers, and shallot.
- 6. Season the sauce with one to two tablespoons of pickle juice, salt, and pepper.
- 7. Peel the garlic and press it directly into the sauce.
- 8. Stir the chives into the sauce and taste to see if it is well seasoned.
- 9. Wash the salad and shake it dry.
- 10. Tear the salad into small pieces if it is too large.
- 11. Wash the radishes and remove the stems.
- 12. Slice the radishes into thin slices.
- 13. Peel the onion and cut it into thin rings.
- 14. Peel the shallot and chop it finely.
- 15. Put the raw beef, lemon zest, mustard, salt, and pepper into a bowl.
- 16. Knead the meat mixture well.
- 17. Adjust the seasoning as needed.
- 18. Form four small meatballs from the mixture.
- 19. Cut the buns in half.
- 20. Place the salad on the bottom half of the buns.
- 21. Place one meatball on the salad.
- 22. Add some sauce on top of the meatballs.
- 23. Garnish the burgers with the onion rings and radish slices.
- 24. Drizzle a little ketchup over the burgers.
- 25. Place the top half of the bun on it.
- 26. Serve the burgers immediately.
