🍽️ Halloumi Skewers with Nectarine Salsa

Ingredients
- 220 g Halloumi (45 % Fett i. Tr.)
- 200 g small brown mushrooms
- 2 red onions
- 4 tbsp maple syrup from Canada (AMBER rich taste)
- 2 tbsp olive oil
- 2 tbsp balsamic vinegar
- salt
- pepper
- 0.5 tsp sweet paprika powder
- 0.5 tsp dried thyme
- 2 nectarines
- 200 g cherry tomatoes
Instructions
- 1. Cut the halloumi cheese into small, bite-sized cubes.
- 2. Clean the mushrooms and halve them depending on their size.
- 3. Peel one onion and quarter it.
- 4. Separate the onion quarters into individual layers.
- 5. Thread the cheese, mushrooms, and onion pieces onto the skewers in an alternating pattern.
- 6. Whisk together two tablespoons of maple syrup with two tablespoons of olive oil.
- 7. Add two tablespoons of balsamic vinegar to the oil and syrup mixture.
- 8. Season the marinade with salt, pepper, paprika powder, and thyme.
- 9. Brush the halloumi skewers with the marinade.
- 10. Let the skewers marinate for ten minutes.
- 11. Wash the nectarines and halve them.
- 12. Remove the pit from the nectarines.
- 13. Dice the nectarine flesh into small cubes.
- 14. Wash the tomatoes and remove the hard core.
- 15. Dice the tomatoes as well.
- 16. Peel the remaining onion.
- 17. Dice the onion finely.
- 18. Mix the nectarines, tomatoes, and onions in a bowl.
- 19. Add the remaining maple syrup, balsamic vinegar, and olive oil to the salsa.
- 20. Season the salsa with salt and pepper.
- 21. Preheat a grill pan or grill over medium heat.
- 22. Grill the halloumi skewers for about five to seven minutes.
- 23. Turn the skewers regularly until they are golden brown on all sides.
- 24. Serve the skewers together with the fresh salsa.
