🍽️ Meatball Skewers with Fresh Vegetables

Ingredients
- 1 stale roll
- 1 shallot
- 1 clove garlic
- vegetable oil (for frying)
- 500 g mixed minced meat
- 1 egg
- 1 tbsp freshly chopped parsley
- 1 pinch organic lemon zest
- salt
- pepper (from the mill)
- breadcrumbs (as needed)
- 3 cm cucumber
- 1 tomato
- 1 cherry tomato
- 2 sprigs parsley
Instructions
- 1. Soak the bread roll in lukewarm water.
- 2. Peel the shallot and the garlic.
- 3. Finely chop the shallot and garlic.
- 4. Heat 1 tablespoon of oil in a hot pan.
- 5. Sauté the onion mixture until translucent.
- 6. Transfer the sautéed vegetables into a bowl.
- 7. Add the minced meat, the egg, the parsley, and the lemon zest to the bowl.
- 8. Squeeze the soaked bread well and add it to the mixture.
- 9. Season the mixture with salt and pepper.
- 10. Knead the ingredients well together.
- 11. Add breadcrumbs if the mixture is too wet.
- 12. Form about 16 small meatballs from the mixture.
- 13. Fry the meatballs in a large pan in hot oil.
- 14. Fry them for 5 to 6 minutes until golden brown on all sides.
- 15. Wash the cucumber.
- 16. Slice the cucumber into rounds.
- 17. Wash the tomato.
- 18. Remove the stem area of the tomato.
- 19. Slice the tomato.
- 20. Wash the cherry tomatoes.
- 21. Cut the cherry tomatoes into wedges.
- 22. Rinse the parsley.
- 23. Shake the parsley dry.
- 24. Pluck the parsley leaves off the stems.
- 25. Thread 2 meatballs, a slice of tomato, parsley leaves, and a cucumber slice onto a wooden skewer.
- 26. Serve the skewers cold or warm.
