🍽️ Crunchy Oat Cranberry Cookies

Ingredients
- 150 g coconut blossom sugar
- 300 g coarse oat flakes
- 200 g whole grain flour (e.g. spelt whole grain flour)
- 1 pinch salt
- 1 pinch cinnamon
- 150 g dried cranberries (unsweetened or sweetened with apple juice)
- 250 ml rice drink (rice milk) (or oat drink)
Instructions
- 1. Preheat: Preheat your oven to 180 degrees Celsius. If using a fan (convection), set it to 160 degrees Celsius. Gas settings 2 to 3 also work well.
- 2. Dry ingredients: Take a large bowl. Add sugar, oat flakes, flour, a pinch of salt, and cinnamon.
- 3. Mix dry: Stir all dry ingredients in the bowl thoroughly.
- 4. Dried fruit: Add the cranberries to the mixture and stir them in briefly.
- 5. Liquid: Pour the rice drink over the dry ingredients.
- 6. Stir dough: Mix the rice drink in only briefly. The dough must not become too soft.
- 7. Let rest: Let the dough rest at room temperature for about 10 minutes.
- 8. Prepare tray: Line a baking tray with baking paper.
- 9. Shape cookies: Use two spoons. Form small mounds of dough onto the tray.
- 10. Press flat: Press the mounds down slightly.
- 11. Bake: Bake the cookies in the hot oven for 10 to 15 minutes.
- 12. Cool down: Remove the tray. Let the cookies cool down on it.
