🍰 Crunchy Oatmeal Cookies

Ingredients
- 250 g coarse oat flakes
- 125 g soft butter
- 100 g honey
- 0.5 vanilla pod
- 0.5 tsp cinnamon
- 2 eggs
- 0.5 tsp baking powder
- 2 tbsp spelt wholemeal flour
- 4 tbsp milk
Instructions
- 1. Open the vanilla pod and scrape out the inside with a knife.
- 2. Mix the butter, honey, and vanilla seeds until creamy.
- 3. Add the eggs and whisk the mixture until frothy.
- 4. Add all remaining ingredients to the mixture.
- 5. Mix everything well until you have a uniform dough.
- 6. Let the dough rest for about 30 minutes.
- 7. Preheat your oven to 200 degrees Celsius (180 degrees Celsius for fan-assisted or gas mark 3).
- 8. Line a baking tray with baking paper.
- 9. Take spoonfuls of dough and place them on the tray with some space between them.
- 10. Bake the cookies for 15 to 20 minutes until golden brown.
