  1. 1. Place the oats in a pot and cover with the broth. Bring to a boil, then simmer over medium heat for 1 minute. Remove from the heat and let the porridge swell for 10 minutes.
  2. 2. Meanwhile, clean, peel, and grate the carrots. Peel the ginger and chop it finely. Wash the mint, shake it dry, and chop it as well.
  3. 3. Mix the carrots with the ginger, mint, and lemon juice. Season the mixture with pepper. Divide the oatmeal and carrot salad onto plates and serve.
