🍳 Oatmeal with Carrot Salad and Mint

Ingredients
- 150 g Oat Flakes
- 500 ml Vegetable Broth
- 2 Carrots
- 5 g Ginger Root
- 1 Handful Mint
- 0.5 Lemon (Juice)
- Pepper
Instructions
- 1. Place the oats in a pot and cover with the broth. Bring to a boil, then simmer over medium heat for 1 minute. Remove from the heat and let the porridge swell for 10 minutes.
- 2. Meanwhile, clean, peel, and grate the carrots. Peel the ginger and chop it finely. Wash the mint, shake it dry, and chop it as well.
- 3. Mix the carrots with the ginger, mint, and lemon juice. Season the mixture with pepper. Divide the oatmeal and carrot salad onto plates and serve.
