  1. 1. Roughly chop the pine nuts.
  2. 2. Add the pine nuts and oat flakes to a large bowl.
  3. 3. Add cinnamon and salt.
  4. 4. Stir the dry ingredients well until evenly combined.
  5. 5. Place honey, maple syrup, and oil in a small saucepan.
  6. 6. Heat the mixture while stirring constantly until it boils.
  7. 7. Remove the saucepan from the heat.
  8. 8. Carefully pour the hot liquid over the oat mixture.
  9. 9. Gently fold the mixture with a wooden spoon to avoid crushing the flakes.
  10. 10. Line a baking tray with baking paper.
  11. 11. Spread the oat mixture evenly on the tray.
  12. 12. Preheat the oven to 125 °C (convection: 110 °C, gas: setting 1-2).
  13. 13. Bake the crunchies in the oven for approx. 1 1/4 hours.
  14. 14. Carefully turn the mixture 2 to 3 times during baking.
  15. 15. Remove the tray from the oven.
  16. 16. Let the crunchies cool down completely.
  17. 17. Mix the cooled crunchies with the dried cherries.
  18. 18. Fill the mixture into an airtight jar.
  19. 19. Remove the crunchies in portions to keep them fresh.
