🍽️ Crispy Oat Vegetable Burgers with Spiced Beans

Ingredients
- 150 g coarse oat flakes
- 1 carrot
- 125 g zucchini (0.5 zucchini)
- 2 onions
- 4 tbsp olive oil
- 500 g flat beans
- 10 g parsley (0.5 bunch)
- 0.5 tsp turmeric powder
- 250 ml vegetable broth
- 1 egg
- 45 g spelt wholemeal flour (3 tbsp)
- salt
- pepper
Instructions
- 1. Pour 250 milliliters of hot water over the oat flakes.
- 2. Let the oat flakes soak for about 30 minutes.
- 3. Peel the carrot.
- 4. Wash the zucchini and trim the ends.
- 5. Grate the carrot and the zucchini finely.
- 6. Peel the onions.
- 7. Chop the onions finely.
- 8. Heat 1 tablespoon of oil in a pan.
- 9. Sauté half of the onions for 2 minutes over medium heat.
- 10. Wash the beans.
- 11. Cut the beans diagonally into pieces.
- 12. Wash the parsley.
- 13. Shake the parsley dry.
- 14. Chop the parsley finely.
- 15. Heat 1 tablespoon of oil in a separate pan.
- 16. Add half of the onions to the pan.
- 17. Sauté the onions for 2 minutes over medium heat.
- 18. Add the beans to the pan.
- 19. Sauté the beans for 4 minutes.
- 20. Add turmeric and vegetable broth.
- 21. Let the mixture simmer under a closed lid for about 12 minutes over low heat.
- 22. Season the beans with salt.
- 23. Season the beans with pepper.
- 24. Mix the soaked oat flakes with the grated carrot.
- 25. Mix the mass with the grated zucchini.
- 26. Mix the mass with the remaining onions.
- 27. Mix the mass with the egg.
- 28. Mix the mass with the flour.
- 29. Season the patty mass with salt.
- 30. Season the patty mass with pepper.
- 31. Heat some oil in a pan.
- 32. Put 1 to 2 tablespoons of the patty mass into the pan.
- 33. Press the mass flat.
- 34. Fry the patty on one side for 3 to 4 minutes over medium heat until golden brown.
- 35. Fry the patty on the other side for 3 to 4 minutes over medium heat until golden brown.
- 36. Repeat the frying process for the remaining patties.
- 37. Serve the patties with the beans.
- 38. Sprinkle the parsley over the beans.
