  1. 1. Sift the spelt flour into a large bowl.
  2. 2. Make a well in the center of the flour.
  3. 3. Crumble the yeast into the well.
  4. 4. Add the honey.
  5. 5. Pour in 150 milliliters of lukewarm water.
  6. 6. Let the mixture rest for five minutes until it has dissolved.
  7. 7. Mix the pre-dough with oat bran and salt using a hand mixer with dough hooks until smooth.
  8. 8. Cover the bowl with a damp kitchen towel.
  9. 9. Let the dough rise at room temperature for about one hour.
  10. 10. Knead the dough thoroughly again after rising.
  11. 11. Work half of the oat flakes into the dough.
  12. 12. Divide the dough into six equal pieces.
  13. 13. Shape each piece into a roll.
  14. 14. Sprinkle the rolls with the remaining oat flakes.
  15. 15. Place the rolls on a baking sheet lined with baking paper.
  16. 16. Score the rolls in a cross shape with a sharp knife.
  17. 17. Preheat the oven to 200 degrees (180 degrees for convection or gas level 3).
  18. 18. Bake the rolls for about 25 minutes until golden brown.
