  2. 2. Mix the cream cheese with the lemon juice, crème fraîche, and horseradish in a bowl.
  3. 3. Season the cream cheese mixture to taste with salt and pepper.
  4. 4. Fill the cream cheese mixture into a piping bag fitted with a star tip.
  5. 5. Pipe the cream cheese mixture onto the previously cut pumpernickel circles.
  6. 6. Break the smoked salmon into rough pieces.
  7. 7. Place one piece of smoked salmon on each cream cheese-topped circle.
  8. 8. Finally, sprinkle the bites with freshly grated horseradish and serve.
