🍽️ Avocado Shrimp Bites

Ingredients
- 300 g Shrimp (peeled and deveined, ready to cook)
- 1 red chili pepper
- 1 clove of garlic
- 2 tbsp olive oil
- 1 red onion
- 2 avocados
- 100 g crème fraîche
- 1 tsp wasabi paste
- 0.5 lime (juice)
- salt
- cayenne pepper
- 8 slices toast bread
- pepper (from the mill)
- spring onion strips (for garnish)
Instructions
- 1. Rinse the shrimp under cold water.
- 2. Pat the shrimp dry with a kitchen towel.
- 3. Cut the shrimp into small pieces.
- 4. Wash the chili pepper thoroughly.
- 5. Halve the chili pepper lengthwise.
- 6. Dice the chili pepper finely.
- 7. Peel the garlic clove.
- 8. Slice the garlic into thin slices.
- 9. Heat the oil in a pan.
- 10. Add the chili pepper, garlic, and shrimp to the hot pan.
- 11. Sauté the ingredients for two to three minutes.
- 12. Ensure the shrimp do not change color.
- 13. Remove the pan from the heat.
- 14. Let the shrimp mixture cool down completely.
- 15. Peel the onion.
- 16. Dice the onion into very small cubes.
- 17. Peel the avocados.
- 18. Halve the avocados.
- 19. Remove the pits from the avocado halves.
- 20. Mash the avocado flesh with a fork.
- 21. Set aside the avocado mixture.
- 22. Add the finely diced onion to the avocado.
- 23. Add two to three tablespoons of crème fraîche to the avocado mixture.
- 24. Mix all ingredients for the avocado cream well.
- 25. Add wasabi paste to the avocado cream.
- 26. Squeeze lime juice over the avocado cream.
- 27. Season the avocado cream with salt.
- 28. Season the avocado cream with black pepper.
- 29. Place the cooled shrimp in a blender.
- 30. Add the remaining crème fraîche to the blender.
- 31. Blend the shrimp and crème fraîche into a smooth cream.
- 32. Squeeze lime juice into the shrimp cream.
- 33. Season the shrimp cream with salt.
- 34. Season the shrimp cream with cayenne pepper.
- 35. Cut about twelve circles from the toast slices.
- 36. Aim for a diameter of about six centimeters.
- 37. Toast the bread circles until crispy.
- 38. Place a portion of avocado cream on each toast circle.
- 39. Place a dollop of shrimp cream on top of the avocado cream.
- 40. Grind fresh black pepper over the bites.
- 41. Slice spring onions into thin strips.
- 42. Garnish the bites with the spring onion strips.
- 43. Serve the bites immediately.
