  6. 6. Dice the chili pepper finely.
  7. 7. Peel the garlic clove.
  8. 8. Slice the garlic into thin slices.
  9. 9. Heat the oil in a pan.
  10. 10. Add the chili pepper, garlic, and shrimp to the hot pan.
  11. 11. Sauté the ingredients for two to three minutes.
  12. 12. Ensure the shrimp do not change color.
  13. 13. Remove the pan from the heat.
  14. 14. Let the shrimp mixture cool down completely.
  15. 15. Peel the onion.
  16. 16. Dice the onion into very small cubes.
  17. 17. Peel the avocados.
  18. 18. Halve the avocados.
  19. 19. Remove the pits from the avocado halves.
  20. 20. Mash the avocado flesh with a fork.

  28. 28. Season the avocado cream with black pepper.
  29. 29. Place the cooled shrimp in a blender.
  30. 30. Add the remaining crème fraîche to the blender.
  31. 31. Blend the shrimp and crème fraîche into a smooth cream.
  32. 32. Squeeze lime juice into the shrimp cream.
  33. 33. Season the shrimp cream with salt.
  34. 34. Season the shrimp cream with cayenne pepper.
  35. 35. Cut about twelve circles from the toast slices.
  36. 36. Aim for a diameter of about six centimeters.
  37. 37. Toast the bread circles until crispy.
  38. 38. Place a portion of avocado cream on each toast circle.
  39. 39. Place a dollop of shrimp cream on top of the avocado cream.
  40. 40. Grind fresh black pepper over the bites.
  41. 41. Slice spring onions into thin strips.
  42. 42. Garnish the bites with the spring onion strips.
