🍽️ Crispy Chicken Skewers with Vegetables

Ingredients
- 400 g chicken breast fillet
- 1 clove garlic
- 7 tbsp oil
- 3 tbsp lemon juice
- 1 tsp mild curry powder
- 2 bell peppers (1 red and 1 yellow each)
- 1 small zucchini
- 2 small onions
- 6 thin slices streaky bacon
- salt
- black pepper
Instructions
- 1. Cut the chicken meat into 12 equal bite-sized pieces. Peel the garlic cloves and press them into a bowl. Add 4 tablespoons of oil, lemon juice, and curry powder, then mix well. Place the meat in the marinade, mix thoroughly, and let it marinate covered for 1 hour.
- 2. Wash the zucchini, trim the ends, and slice it. Wash the bell peppers, halve them, remove the seeds and white membranes, and cut into bite-sized pieces. Peel the onions and cut them into eight wedges lengthwise.
- 3. Remove the meat from the marinade, let it drip dry, and pat it dry with kitchen paper. Wrap each piece of meat in half a slice of bacon. Thread 3 pieces of meat and the vegetables alternately onto each skewer. Season the skewers with salt and pepper.
- 4. Fry the chicken skewers in the remaining oil for approx. 8-10 minutes until crispy on all sides. Brush them repeatedly with the remaining marinade while cooking.
