  1. 1. Whisk lemon juice, olive oil, water, honey, salt, thyme, and chili together in a bowl to create a uniform marinade.
  2. 2. Thoroughly wash the chicken pieces and then pat them completely dry with kitchen paper.
  3. 3. Pour the marinade over the chicken and mix everything well so that every piece is evenly coated.
  4. 4. Let the chicken marinate in the refrigerator for about 2 hours.
  5. 5. Preheat the oven to 250 degrees.
  6. 6. Brush a baking tray with a little olive oil and place bay leaves on top.
  7. 7. Let the chicken pieces drain briefly and then place them on the prepared tray.
  8. 8. Place the tray in the oven and roast the chicken until golden brown for about 30 to 35 minutes.
  9. 9. Turn the chicken once during the cooking time and brush it repeatedly with the remaining marinade.
  10. 10. Finally, brush the finished, hot chicken pieces once more with a little honey.
  11. 11. Serve the chicken on a bed of fresh bay leaves.
