🍽️ Creamy Chicken Soup with Celery and Potatoes

Ingredients
- 4 chicken breast fillets (approx. 140 g each)
- 4 stalks celery
- 500 g waxy potatoes
- 1 onion
- 2 tbsp olive oil
- salt
- pepper (from the mill)
- 1 tbsp cornstarch
- 250 ml milk
- 500 ml chicken broth
Instructions
- 1. Wash the chicken breast and pat it dry with a kitchen towel.
- 2. Cut the chicken meat into small cubes.
- 3. Wash the celery and remove the tough strings.
- 4. Cut the celery into bite-sized pieces.
- 5. Peel the potatoes and cut them into thin strips.
- 6. Peel the onion and chop it roughly.
- 7. Heat some oil in a pot.
- 8. Fry the chicken cubes in the hot oil.
- 9. Add the celery and onions to the chicken.
- 10. Sauté the vegetables lightly for one to two minutes.
- 11. Season the mixture with salt and pepper.
- 12. Dust everything with flour.
- 13. Add the potato strips to the pot.
- 14. Deglaze the mixture with milk and broth.
- 15. Let the soup simmer for about 15 minutes, stirring occasionally.
- 16. If necessary, add a little more broth.
- 17. Taste the soup at the end and adjust with salt and pepper.
- 18. Serve the soup with bread as desired.
