🍽️ Chicken Skewers with Lentil Salad

Ingredients
- 300 g green lentils
- 1 bay leaf
- 3 peppercorns
- salt
- 600 g chicken breast fillet
- pepper
- 2 tbsp vegetable oil
- lemons
- 1 bunch parsley
- 3 tbsp olive oil
Instructions
- 1. Soak the lentils in water overnight.
- 2. Drain the soaking water the next day.
- 3. Place the lentils in a pot.
- 4. Add a bay leaf, peppercorns, and a pinch of salt.
- 5. Cover the lentils with water.
- 6. Cook the lentils at medium heat for about 45 minutes until tender.
- 7. Rinse the chicken breast fillet under cold water.
- 8. Pat the meat dry with a kitchen towel.
- 9. Cut the chicken meat into bite-sized cubes.
- 10. Thread the meat cubes onto wooden skewers.
- 11. Season the skewers with salt and pepper.
- 12. Heat vegetable oil in a frying pan.
- 13. Fry the meat cubes at medium heat until golden brown on all sides.
- 14. Drain the cooked lentils.
- 15. Let the lentils cool down.
- 16. Squeeze half a lemon.
- 17. Wash the parsley.
- 18. Shake the parsley dry.
- 19. Pluck the parsley leaves from the stems.
- 20. Mix the lentils with olive oil and two tablespoons of lemon juice.
- 21. Season the lentil salad with salt and pepper to taste.
- 22. Distribute the lentil salad onto plates.
- 23. Place the chicken skewers on top of the salad.
