🥗 Grilled Chicken Skewers with Zucchini and Tomato Salad

Ingredients
- 4 chicken breast fillets
- 1 tsp garam masala
- 2 tbsp light soy sauce
- 2 tbsp olive oil
- 2 zucchini
- 6 tomatoes
- 2 garlic cloves
- 100 ml poultry broth
- salt
- pepper (from the mill)
- chicory leaf (for garnish)
Instructions
- 1. Wash the zucchini thoroughly.
- 2. Remove the hard ends of the zucchini.
- 3. Slice the zucchini into round slices.
- 4. Pour boiling water over the tomatoes.
- 5. Remove the tomatoes from the hot water immediately.
- 6. Cool the tomatoes under cold water.
- 7. Peel the skin off the tomatoes.
- 8. Remove the hard stem base of the tomatoes.
- 9. Cut the tomatoes into wedges.
- 10. Wash the chicken breast fillets.
- 11. Pat the meat dry with a kitchen towel.
- 12. Cut the chicken meat into narrow strips.
- 13. Mix the garam masala spice with a pinch of salt.
- 14. Add fresh pepper.
- 15. Add lemon juice to the spice mixture.
- 16. Add one tablespoon of oil to the spice mixture.
- 17. Mix all ingredients for the marinade well.
- 18. Brush the chicken meat with the marinade.
- 19. Preheat the grill.
- 20. Place the chicken strips on the grill.
- 21. Turn the meat occasionally while grilling.
- 22. Grill the chicken for about 10 minutes.
- 23. Finely chop the garlic clove.
- 24. Heat the remaining oil in a pan.
- 25. Sauté the garlic and zucchini slices in the oil.
- 26. Deglaze the pan with the broth.
- 27. Add the tomato wedges to the pan.
- 28. Simmer the vegetables for 2 to 3 minutes.
- 29. Season the vegetables with salt and pepper.
- 30. Serve the vegetables together with the skewers.
- 31. Decorate the dish with chicory as desired.
- 32. Serve the shallot vinaigrette on the side.
