🍽️ Crispy Chicken Skewers with Pumpkin in the Air Fryer

Ingredients
- 0.5 Hokkaido pumpkin (400 g)
- salt
- pepper
- 1 sprig rosemary
- 2 tbsp olive oil
- 200 g chicken breast fillet
- 1 small zucchini (200 g)
- 1 red onion
- 12 cherry tomatoes
- 1 clove garlic
- chili flakes
- 0.25 dried Italian herbs
- 150 g yogurt (3.5% fat)
- a handful parsley
Instructions
- 1. Wash the pumpkin thoroughly.
- 2. Cut the pumpkin in half.
- 3. Remove the inside and seeds.
- 4. Divide the flesh into four large pieces.
- 5. Cut these pieces into thin strips.
- 6. Wash the rosemary sprig under running water.
- 7. Shake the water off the rosemary.
- 8. Chop the rosemary needles very finely.
- 9. Put the pumpkin strips into a large bowl.
- 10. Add one tablespoon of oil.
- 11. Season with salt and pepper to taste.
- 12. Add the chopped rosemary.
- 13. Mix everything well until the pumpkin strips are coated.
- 14. Pat the chicken breast dry with kitchen paper.
- 15. Cut the meat into approx. 2 cm cubes.
- 16. Wash the zucchini thoroughly.
- 17. Cut the zucchini into bite-sized pieces.
- 18. Peel the onion.
- 19. Cut the onion into four quarters.
- 20. Carefully separate the onion layers from each other.
- 21. Wash the tomatoes.
- 22. Thread the chicken pieces onto the skewers in an alternating pattern.
- 23. Alternate with the zucchini pieces.
- 24. Add the onion layers.
- 25. Place the tomatoes in between.
- 26. Peel the garlic.
- 27. Chop the garlic finely.
- 28. Take half of the chopped garlic.
- 29. Mix it with the remaining oil.
- 30. Add salt and pepper.
- 31. Add chili flakes.
- 32. Add dried herbs.
- 33. Stir everything into a seasoning mixture.
- 34. Brush the skewers with this mixture.
- 35. Place the pumpkin strips on the rack in Zone 1.
- 36. Place the skewers on the rack in Zone 2.
- 37. Set the air fryer to 180 °C.
- 38. Select the „Roast“ (Bake) function.
- 39. Cook the skewers for 15 minutes.
- 40. Set the air fryer to 200 °C.
- 41. Select the „Airfry“ (Air Fry) function.
- 42. Cook the pumpkin for 15 minutes.
- 43. Shake the pumpkin strips once after 7.5 minutes.
- 44. Wash the parsley.
- 45. Shake the parsley dry.
- 46. Chop the parsley finely.
- 47. Take the remaining garlic.
- 48. Mix the yogurt with the garlic.
- 49. Add the chopped parsley.
- 50. Season the dip with salt and pepper.
- 51. Arrange the pumpkin on plates.
- 52. Place the chicken skewers alongside.
- 53. Serve the dish with the yogurt dip.
