🍽️ Honey Lime Chicken Skewers

Ingredients
- 2 red bell peppers
- 6 garlic cloves
- 3 limes
- 2 tbsp flower honey
- 6 tbsp oil
- 1800 g small roast chickens (2 small roast chickens)

Instructions
- 1. Cut the chili peppers in half lengthwise and remove the seeds.
- 2. Rinse the peppers and dice them finely.
- 3. Peel the garlic and chop it finely.
- 4. Zest the lime and squeeze out the juice.
- 5. Mix the chili, garlic, lime zest, lime juice, honey, and oil in a bowl.
- 6. Cut the chicken along the backbone using poultry shears.
- 7. Remove the backbone and the tail end.
- 8. Cut off the wing tips at the joint.
- 9. Place the chicken breast-side up on your work surface.
- 10. Pound the chicken flat using a heavy saucepan or a meat mallet.
- 11. Rinse the chicken under cold water and pat it dry.
- 12. Thread one skewer through the wing, breast, and thigh of each chicken.
- 13. Place the chickens on a baking sheet.
- 14. Rub the chickens with the prepared marinade.
- 15. Cover the tray with plastic wrap.
- 16. Place the chickens in a cool place to marinate for 2 hours.
- 17. Scrape off excess marinade from the chickens and collect it in a small bowl.
- 18. Preheat the grill.
- 19. Place the chickens skin-side down on the hot grill.
- 20. Grill the chickens for 25 minutes over medium heat.
- 21. Turn the chickens and grill for another 15 minutes.
- 22. Grill the chickens for a further 10 to 15 minutes.
- 23. Turn the chickens frequently during this time.
- 24. Brush the chickens regularly with the collected marinade.
- 25. Season the chickens with salt at the end.
