  1. 1. Cut the chili peppers in half lengthwise and remove the seeds.
  2. 2. Rinse the peppers and dice them finely.
  3. 3. Peel the garlic and chop it finely.
  4. 4. Zest the lime and squeeze out the juice.
  5. 5. Mix the chili, garlic, lime zest, lime juice, honey, and oil in a bowl.
  6. 6. Cut the chicken along the backbone using poultry shears.
  7. 7. Remove the backbone and the tail end.
  8. 8. Cut off the wing tips at the joint.
  9. 9. Place the chicken breast-side up on your work surface.
  10. 10. Pound the chicken flat using a heavy saucepan or a meat mallet.
  11. 11. Rinse the chicken under cold water and pat it dry.
  12. 12. Thread one skewer through the wing, breast, and thigh of each chicken.
  13. 13. Place the chickens on a baking sheet.
  14. 14. Rub the chickens with the prepared marinade.
  15. 15. Cover the tray with plastic wrap.
  16. 16. Place the chickens in a cool place to marinate for 2 hours.
  17. 17. Scrape off excess marinade from the chickens and collect it in a small bowl.
  18. 18. Preheat the grill.
  19. 19. Place the chickens skin-side down on the hot grill.
  20. 20. Grill the chickens for 25 minutes over medium heat.
  21. 21. Turn the chickens and grill for another 15 minutes.
  22. 22. Grill the chickens for a further 10 to 15 minutes.
  23. 23. Turn the chickens frequently during this time.
  24. 24. Brush the chickens regularly with the collected marinade.
  25. 25. Season the chickens with salt at the end.
