🍽️ Grilled chicken breast with marinated zucchini strips

Ingredients
- 700 g chicken breast fillet (4 chicken breast fillets)
- 2 garlic cloves
- 2 sprigs rosemary
- 4 sprigs thyme
- 4 tbsp olive oil
- 0.5 lemon (juice)
- pepper
- 1000 g zucchini (4 zucchini)
- 10 g basil (0.5 bunch)
- sea salt
- 160 g tomatoes (2 tomatoes)
Instructions
- 1. Rinse the chicken under cold water.
- 2. Pat the meat dry with a kitchen towel.
- 3. Cut the breast fillets horizontally, but not all the way through.
- 4. Open the fillets like a book.
- 5. Pound the meat thin using a meat mallet or rolling pin.
- 6. Peel the garlic.
- 7. Chop the garlic finely.
- 8. Wash the rosemary and thyme.
- 9. Shake the herbs dry.
- 10. Chop the herbs finely.
- 11. Mix 2 tablespoons of olive oil with half of the garlic.
- 12. Stir in the lemon juice.
- 13. Add the chopped herbs.
- 14. Season the marinade with pepper.
- 15. Place the meat in a baking dish.
- 16. Pour the marinade over the meat.
- 17. Cover the dish.
- 18. Let the meat marinate for at least 3 hours.
- 19. Wash the zucchini.
- 20. Trim the ends of the zucchini.
- 21. Slice the zucchini lengthwise into about 3 millimeter thick slices.
- 22. Wash the basil.
- 23. Shake the basil dry.
- 24. Chop the basil leaves finely.
- 25. Mix the zucchini with the remaining oil.
- 26. Add the remaining garlic.
- 27. Season the zucchini with salt.
- 28. Season the zucchini with pepper.
- 29. Add the basil.
- 30. Let the zucchini marinate for about 3 hours.
- 31. Pour boiling water over the tomatoes briefly.
- 32. Shock the tomatoes immediately with cold water.
- 33. Remove the skin of the tomatoes.
- 34. Quarter the tomatoes.
- 35. Remove the core.
- 36. Cut the flesh into small cubes.
- 37. Season the tomato cubes with a little salt.
- 38. Remove the chicken from the marinade.
- 39. Season the chicken lightly with salt.
- 40. Preheat a grill or grill pan.
- 41. Grill the chicken for about 2 minutes on each side.
- 42. Place the marinated zucchini strips in a pan.
- 43. Sauté the zucchini over medium heat for about 2 minutes.
- 44. Remove the zucchini from the heat when tender-crisp.
- 45. Preheat 4 plates.
- 46. Divide the zucchini among the plates.
- 47. Place the halved chicken breast fillets decoratively on top.
- 48. Garnish the dish with the tomato cubes.
