  3. 3. Cut the breast fillets horizontally, but not all the way through.
  4. 4. Open the fillets like a book.
  5. 5. Pound the meat thin using a meat mallet or rolling pin.
  6. 6. Peel the garlic.
  7. 7. Chop the garlic finely.
  8. 8. Wash the rosemary and thyme.
  9. 9. Shake the herbs dry.
  10. 10. Chop the herbs finely.
  11. 11. Mix 2 tablespoons of olive oil with half of the garlic.
  12. 12. Stir in the lemon juice.
  13. 13. Add the chopped herbs.
  14. 14. Season the marinade with pepper.
  15. 15. Place the meat in a baking dish.
  16. 16. Pour the marinade over the meat.
  17. 17. Cover the dish.
  18. 18. Let the meat marinate for at least 3 hours.
  19. 19. Wash the zucchini.
  20. 20. Trim the ends of the zucchini.
  21. 21. Slice the zucchini lengthwise into about 3 millimeter thick slices.

  24. 24. Chop the basil leaves finely.
  25. 25. Mix the zucchini with the remaining oil.

  30. 30. Let the zucchini marinate for about 3 hours.
  31. 31. Pour boiling water over the tomatoes briefly.
  32. 32. Shock the tomatoes immediately with cold water.

  34. 34. Quarter the tomatoes.

  47. 47. Place the halved chicken breast fillets decoratively on top.
  48. 48. Garnish the dish with the tomato cubes.
