🍽️ Oven Roasted Chicken Drumsticks with Potatoes and Vegetables

Ingredients
- 4 chicken drumsticks
- 600 g sweet potatoes
- 1 onion
- 4 tbsp olive oil
- 150 ml dry white wine
- 200 ml poultry stock
- 60 g green olives (pitted)
- 1 pinch chili flakes
- 1 tbsp honey
- 1 tbsp lemon juice
- 1 tbsp freshly chopped parsley
Instructions
- 1. Preheat the oven to 180 degrees Celsius using the top and bottom heat setting.
- 2. Wash the chicken drumsticks thoroughly. Pat them dry with a kitchen towel. Separate the drumsticks into two parts at the joint.
- 3. Wash the potatoes. Cut them into coarse cubes.
- 4. Peel the onion. Cut it into coarse cubes as well.
- 5. Place the chicken meat, potatoes, and onions into a baking dish.
- 6. Drizzle everything with 2 tablespoons of oil.
- 7. Season the dish with salt and pepper to taste.
- 8. Pour the white wine over the meat and vegetables.
- 9. Place the dish in the oven. Braise the chicken for about 35 minutes.
- 10. Gradually add some meat stock (broth) to prevent it from drying out.
- 11. Turn the chicken drumsticks repeatedly to ensure even cooking.
- 12. Add the olives to the dish about 10 minutes before the end of the cooking time.
- 13. Mix chili flakes, the remaining oil, honey, lemon juice, and parsley in a small bowl to create a sauce.
- 14. Brush the chicken meat with this sauce before finishing the cooking process.
