🍽️ Crispy Chicken Thighs with Herb Crust

Ingredients
- 4 chicken drumsticks
- 2 eggs
- 80 g breadcrumbs
- 2 tbsp chopped parsley
- 2 sun-dried tomatoes in oil
- 2 tbsp potato starch
- 2 tbsp mustard
- 2 tbsp honey
- 0.5 tsp paprika powder
- salt
- pepper
Instructions
- 1. Rinse the chicken thighs under running water.
- 2. Pat the meat completely dry with a kitchen towel.
- 3. Whisk honey, mustard, paprika powder, salt, and pepper in a small bowl to form a smooth marinade.
- 4. Rub the chicken thighs thoroughly with the marinade all over.
- 5. Beat the eggs in a separate bowl with the potato starch until smooth.
- 6. Let the tomatoes drain well.
- 7. Pat the tomatoes dry and chop them very finely.
- 8. Mix breadcrumbs, the finely chopped tomatoes, and the herbs in a shallow dish.
- 9. Dip the marinated chicken thighs through the egg mixture.
- 10. Then roll the thighs in the breadcrumb-herb mixture until completely covered.
- 11. Place the breaded chicken thighs in a fireproof baking dish.
- 12. Preheat the oven to 200 degrees Celsius.
- 13. Roast the chicken thighs in the preheated oven for about 40 minutes.
