  2. 2. Pat the meat completely dry with a kitchen towel.
  3. 3. Whisk honey, mustard, paprika powder, salt, and pepper in a small bowl to form a smooth marinade.
  4. 4. Rub the chicken thighs thoroughly with the marinade all over.
  5. 5. Beat the eggs in a separate bowl with the potato starch until smooth.
  6. 6. Let the tomatoes drain well.
  7. 7. Pat the tomatoes dry and chop them very finely.
  8. 8. Mix breadcrumbs, the finely chopped tomatoes, and the herbs in a shallow dish.
  9. 9. Dip the marinated chicken thighs through the egg mixture.
  10. 10. Then roll the thighs in the breadcrumb-herb mixture until completely covered.
  11. 11. Place the breaded chicken thighs in a fireproof baking dish.
  12. 12. Preheat the oven to 200 degrees Celsius.
  13. 13. Roast the chicken thighs in the preheated oven for about 40 minutes.
