  1. 1. Rinse the chicken thighs under running water.
  2. 2. Pat the meat completely dry with a kitchen towel.
  3. 3. Whisk honey, mustard, paprika powder, salt, and pepper in a small bowl to make a marinade.
  4. 4. Rub the chicken thighs all over with the marinade.
  5. 5. Beat the eggs in a separate bowl until smooth with the potato starch.
  6. 6. Mix sesame seeds and cornflakes in a third bowl.
  7. 7. Coat the marinated thighs in the egg mixture so they are completely covered.
  8. 8. Press the wet thighs into the sesame-cornflake mixture until they are firmly coated.
  9. 9. Place the breaded chicken thighs in a baking dish.
  10. 10. Preheat the oven to 220 °C (200 °C with fan or gas mark 3–4).
  11. 11. Bake the chicken thighs for 40 minutes in the oven until golden brown and cooked through.
