🍽️ Grilled Chicken Salad with Peaches

Ingredients
- 1 small radicchio
- 0.5 lime
- 1 green chili pepper
- salt
- 2 tbsp balsamic vinegar
- 3 tbsp olive oil
- 100 g buffalo mozzarella
- 3 large yellow tomatoes
- pepper
- 2 ripe peaches
- 300 g chicken breast fillet (2 chicken breast fillets)
Instructions
- 1. Thoroughly wash the radicchio.
- 2. Spin the radicchio dry using a salad spinner.
- 3. Cut the radicchio into small, bite-sized pieces.
- 4. Squeeze the lime to extract the juice.
- 5. Halve the chili pepper lengthwise.
- 6. Remove the seeds from the chili pepper.
- 7. Rinse the deseeded chili pepper.
- 8. Finely chop the chili.
- 9. Mix the chili with one tablespoon of lime juice.
- 10. Add salt and balsamic vinegar to the chili mixture.
- 11. Stir the sauce until smooth.
- 12. Fold in two tablespoons of olive oil into the sauce.
- 13. Let the mozzarella drain well.
- 14. Cut the mozzarella into small pieces.
- 15. Wash the tomatoes.
- 16. Cut out the stem areas of the tomatoes in a wedge shape.
- 17. Slice the tomato flesh into rounds.
- 18. Place the tomato slices on a plate.
- 19. Season the tomatoes with salt.
- 20. Season the tomatoes with pepper.
- 21. Wash the peaches.
- 22. Halve the peaches.
- 23. Remove the pits from the peach halves.
- 24. Brush the cut surfaces of the peaches with one teaspoon of oil.
- 25. Heat a grill pan.
- 26. Wash the chicken breast fillets.
- 27. Pat the chicken breast fillets dry with a cloth.
- 28. Brush the chicken breast fillets with the remaining oil.
- 29. Season the chicken breast fillets with salt.
- 30. Season the chicken breast fillets with pepper.
- 31. Place the chicken breast fillets in the hot grill pan.
- 32. Grill the chicken breast fillets over medium heat.
- 33. Grill the chicken breast fillets for about five minutes on each side.
- 34. Grill the peach halves shortly before the end of the cooking time.
- 35. Place the peaches with the cut side down in the pan.
- 36. Grill the peaches firmly to get grill marks.
- 37. Place the radicchio on top of the tomatoes.
- 38. Place the mozzarella on top of the radicchio.
- 39. Place the grilled peaches on top of the salad.
- 40. Place the grilled chicken breast fillets on top of the salad.
- 41. Drizzle the finished salad with the chili sauce.
- 42. Serve the salad.
