🍽️ Fruity Chicken Salad with Goat Cheese

Ingredients
- 400 g chicken breast fillet
- salt
- 200 g goat cheese in slices (mild)
- 200 g grapes (seedless)
- 1 small jar green olives (can also be omitted)
- 3 tbsp chive rings
- 4 tbsp sliced almonds
- 3 apples (red)
- 2 limes (juice)
- 1 tbsp honey
- 2 tbsp grape seed oil
Instructions
- 1. Season the chicken breast generously with salt.
- 2. Wrap the meat tightly in cling film and seal the ends well.
- 3. Wrap the package tightly again in aluminum foil.
- 4. Let the package steep in hot water for about 20 minutes.
- 5. Remove the foil and let the meat cool down completely.
- 6. Cut the goat cheese into thin strips.
- 7. Wash the apples thoroughly.
- 8. Remove the core using a corer.
- 9. Cut the apple flesh into long, thin sticks.
- 10. Wash the grapes and pat them dry.
- 11. Halve the grapes.
- 12. Drain the olives well.
- 13. Rinse very salty olives briefly under cold water.
- 14. Halve or quarter the olives.
- 15. Cut the cooled chicken breast into 1 cm cubes.
- 16. Squeeze the limes.
- 17. Mix the lime juice with honey and oil.
- 18. Gently mix all salad ingredients together.
- 19. Let the salad marinate for about 1 to 2 hours.
- 20. Fill the salad into small bowls.
- 21. Serve the salad with white bread.
