  1. 1. Carefully cut the chicken breast fillet off the bone, but make sure it stays connected at the skin side.
  2. 2. Wash the meat, pat it dry with a kitchen towel, and season it generously with salt and pepper.
  3. 3. Place the fillet with the meat side facing down on your cutting board.
  4. 4. Take the tomatoes out of the can and let them drain well.
  5. 5. Finely chop the capers and mix them together with the tomatoes and the parsley.
  6. 6. Spread this filling evenly over the meat.
  7. 7. Fold the meat back up and tie it securely with kitchen twine so it keeps its shape.
  8. 8. Heat some oil in a large pan and brown the chicken roulades on all sides until golden.
  9. 9. Pour in the broth and let the roulades simmer gently under a lid for about 20 minutes.
  10. 10. Remove the meat from the pan and set it aside to keep warm.
  11. 11. Add the tomato pieces and the herbs to the pan juices, season everything again with salt and pepper, and let the sauce simmer lightly for about 10 minutes.
  12. 12. Slice the finished chicken roulades into thick pieces and serve them together with the delicious tomato sauce.
