🍽️ Chicken Roulades

Ingredients
- 1000 g chicken breast fillet (with skin and bone 2 chicken breasts)
- salt
- pepper
- 80 g dried tomatoes (in oil)
- 1 tbsp capers
- 2 tbsp chopped parsley
- 3 tbsp oil
- 250 ml poultry broth
- 400 g chopped tomatoes (1 can)
- 1 tsp fresh thyme (chopped)
- 1 tsp fresh oregano (chopped)
Instructions
- 1. Carefully cut the chicken breast fillet off the bone, but make sure it stays connected at the skin side.
- 2. Wash the meat, pat it dry with a kitchen towel, and season it generously with salt and pepper.
- 3. Place the fillet with the meat side facing down on your cutting board.
- 4. Take the tomatoes out of the can and let them drain well.
- 5. Finely chop the capers and mix them together with the tomatoes and the parsley.
- 6. Spread this filling evenly over the meat.
- 7. Fold the meat back up and tie it securely with kitchen twine so it keeps its shape.
- 8. Heat some oil in a large pan and brown the chicken roulades on all sides until golden.
- 9. Pour in the broth and let the roulades simmer gently under a lid for about 20 minutes.
- 10. Remove the meat from the pan and set it aside to keep warm.
- 11. Add the tomato pieces and the herbs to the pan juices, season everything again with salt and pepper, and let the sauce simmer lightly for about 10 minutes.
- 12. Slice the finished chicken roulades into thick pieces and serve them together with the delicious tomato sauce.
