  1. 1. Cut the butter into small cubes.
  2. 2. Place the butter, flour, egg white, and one teaspoon of salt into a bowl.
  3. 3. Add six to eight tablespoons of cold water.
  4. 4. Knead the dough until smooth using the dough hooks of a hand mixer.
  5. 5. Cover the bowl and refrigerate the dough for about one hour.
  6. 6. Cut the duck meat into pieces.
  7. 7. Remove the skin from each piece.
  8. 8. Dice one duck breast fillet and set it aside.
  9. 9. Finely chop the remaining duck meat.
  10. 10. Finely chop the chicken fillets as well.
  11. 11. Mix the chopped meat with coriander, pepper, and Calvados.
  12. 12. Place the mixture in the freezer compartment for 30 minutes.
  13. 13. Puree the meat mixture in the electric food processor.
  14. 14. Wash the thyme and strip the leaves from the stems.
  15. 15. Stir the thyme leaves, eggs, cream, and pistachios into the meat mixture.
  16. 16. Fold in the previously diced duck breast pieces.
  17. 17. Season the filling with about two teaspoons of salt and adjust to taste.
  18. 18. Preheat the oven to 230 degrees (210 degrees for fan-assisted ovens).
  19. 19. Lightly dust the work surface with flour.
  20. 20. Roll out the dough to a thickness of about 0.5 centimeters.
  21. 21. Cut out a shape for the base of the pie from the dough.
  22. 22. Cut out a lid from the dough as well.
  23. 23. Place the dough base into the pie dish.
  24. 24. Spread the filling gradually into the dish.
  25. 25. Tap the dish firmly on the table occasionally to release air bubbles.
  26. 26. Cut a few small holes into the dough lid.
  27. 27. Place the lid on the pie.
  28. 28. Shape decorations from the leftover dough.
  29. 29. Place the decorations on top of the pie.
  30. 30. Place the pie in the preheated oven at 225 degrees in the center.
  31. 31. Bake the pie for 25 minutes.
  32. 32. Whisk the egg yolk with milk.
  33. 33. Brush the pie with the egg yolk and milk mixture.
  34. 34. Reduce the oven temperature to 180 degrees.
  35. 35. Bake the pie for another 40 minutes.
  36. 36. Remove the chicken pie from the oven.
  37. 37. Let the pie cool down in the dish.
