🍽️ Crispy Chicken Pie

Ingredients
- 150 g Butter
- 350 g Flour
- 1 Egg white
- Salt
- 1 Duck (approx. 2,4 kg)
- 2 Chicken breast fillets
- 2 tsp Coriander
- 2 tsp Pepper (from the mill)
- 3 tbsp Calvados
- 0.5 bunch Thyme
- 2 Eggs
- 200 g Whipping cream
- 2 tbsp Pistachios
- 1 Egg yolk
- 1 tbsp Milk
Instructions
- 1. Cut the butter into small cubes.
- 2. Place the butter, flour, egg white, and one teaspoon of salt into a bowl.
- 3. Add six to eight tablespoons of cold water.
- 4. Knead the dough until smooth using the dough hooks of a hand mixer.
- 5. Cover the bowl and refrigerate the dough for about one hour.
- 6. Cut the duck meat into pieces.
- 7. Remove the skin from each piece.
- 8. Dice one duck breast fillet and set it aside.
- 9. Finely chop the remaining duck meat.
- 10. Finely chop the chicken fillets as well.
- 11. Mix the chopped meat with coriander, pepper, and Calvados.
- 12. Place the mixture in the freezer compartment for 30 minutes.
- 13. Puree the meat mixture in the electric food processor.
- 14. Wash the thyme and strip the leaves from the stems.
- 15. Stir the thyme leaves, eggs, cream, and pistachios into the meat mixture.
- 16. Fold in the previously diced duck breast pieces.
- 17. Season the filling with about two teaspoons of salt and adjust to taste.
- 18. Preheat the oven to 230 degrees (210 degrees for fan-assisted ovens).
- 19. Lightly dust the work surface with flour.
- 20. Roll out the dough to a thickness of about 0.5 centimeters.
- 21. Cut out a shape for the base of the pie from the dough.
- 22. Cut out a lid from the dough as well.
- 23. Place the dough base into the pie dish.
- 24. Spread the filling gradually into the dish.
- 25. Tap the dish firmly on the table occasionally to release air bubbles.
- 26. Cut a few small holes into the dough lid.
- 27. Place the lid on the pie.
- 28. Shape decorations from the leftover dough.
- 29. Place the decorations on top of the pie.
- 30. Place the pie in the preheated oven at 225 degrees in the center.
- 31. Bake the pie for 25 minutes.
- 32. Whisk the egg yolk with milk.
- 33. Brush the pie with the egg yolk and milk mixture.
- 34. Reduce the oven temperature to 180 degrees.
- 35. Bake the pie for another 40 minutes.
- 36. Remove the chicken pie from the oven.
- 37. Let the pie cool down in the dish.
