  1. 1. Peel the onions and cut them into wedges.
  2. 2. Wash the chicken drumsticks and pat them dry with a kitchen towel.
  3. 3. Season the drumsticks with salt and pepper.
  4. 4. Heat oil in a casserole dish or pot over high heat.
  5. 5. Brown the chicken drumsticks on all sides.
  6. 6. Add the onion wedges to the meat and sauté them briefly.
  7. 7. Add thyme, Noilly Prat (a dry vermouth wine), and broth to the casserole.
  8. 8. Preheat the oven to 200 degrees Celsius and set the rack to the lower position.
  9. 9. Roast the dish in the preheated oven for about 20 minutes.
  10. 10. Wash and peel the carrots.
  11. 11. Cut the carrots into bite-sized pieces.
  12. 12. Add the carrot pieces to the chicken drumsticks.
  13. 13. Roast everything in the oven for another 20 minutes.
