🍽️ Crispy Chicken Drumsticks with Cherry-Chocolate Glaze

Ingredients
- 4 chicken drumsticks
- 0.5 lemon (juice squeezed)
- salt
- 200 g yogurt
- 1 tbsp vinegar
- 2 tbsp sesame oil
- 4 garlic cloves
- 1 tsp ginger (freshly grated)
- 2 tsp coriander (ground)
- 1 tsp cumin (ground)
- 0.5 tsp chili powder
- 0.5 tsp turmeric powder
- 0.5 tsp red food coloring
- pepper (from the mill)
- 400 g sour cherries
- 0.125 chicken broth
- 0.25 red port wine
- 50 g dark chocolate
- 1 tbsp lemon juice
- 1 piece lemon zest
- salt
- pepper (from the mill)
Instructions
- 1. Rinse the chicken drumsticks under running water.
- 2. Pat them completely dry with a kitchen towel.
- 3. Rub the drumsticks with lemon juice and salt.
- 4. Place the yogurt, vinegar, and oil into a bowl.
- 5. Press the garlic directly into the yogurt mixture.
- 6. Stir in the ginger.
- 7. Add the coriander, cumin, chili, turmeric, pepper, and food coloring.
- 8. Whisk all ingredients well until a homogeneous marinade forms.
- 9. Coat the chicken drumsticks thoroughly with the marinade.
- 10. Place the drumsticks in a container and seal it.
- 11. Let the drumsticks marinate in the refrigerator for about 6 hours.
- 12. Line a baking tray with aluminum foil.
- 13. Preheat the oven to 200 degrees Celsius.
- 14. Place the marinated drumsticks on the prepared tray.
- 15. Bake the drumsticks in the oven for about 35 minutes.
- 16. Brush the drumsticks with the remaining marinade several times during baking.
- 17. Rinse the cherries under cold water.
- 18. Let the cherries drain well in a sieve.
- 19. Pit the cherries.
- 20. Pour the broth and port wine into a saucepan.
- 21. Let the liquid reduce slightly while stirring constantly.
- 22. Remove the saucepan from the heat.
- 23. Add the chopped chocolate to the warm liquid.
- 24. Let the chocolate melt in it while stirring.
- 25. Season the sauce with lemon juice, a pinch of salt, and pepper.
- 26. Add the pitted cherries to the sauce.
- 27. Let the cherries heat through in the sauce for a short time.
- 28. Cut the lemon zest into fine strips.
- 29. Fold the lemon strips into the finished sauce.
- 30. Serve the chicken drumsticks with the sauce.
