  1. 1. Use kitchen shears to cut off the tips of the chicken wings and save them for another use, such as making broth.
  2. 2. Use a sharp knife to cut the wings in half right at the joint.
  3. 3. Season the wings with salt and pepper, place them on an oiled baking sheet, and roast them in a preheated oven at 220 degrees for about 20 to 25 minutes, turning them once halfway through.
  4. 4. Meanwhile, squeeze the juice from the orange and mix it with the chili sauce. Trim the spring onions, wash them, and chop them finely.
  5. 5. Peel the ginger and chop it finely as well.
  6. 6. Stir the chopped spring onions, ginger, and soy sauce into the chili-orange mixture.
  7. 7. Remove the baked chicken wings from the oven, place them in a large bowl, and toss them with 1 to 2 tablespoons of the chili sauce.
  8. 8. Serve the chicken wings alongside the remaining chili dip.
