  1. 1. Rinse the chicken wings under cold water.
  2. 2. Pat the wings completely dry with a kitchen towel.
  3. 3. Place the wings side by side in a shallow baking dish.
  4. 4. Mix the soy sauce, honey, hoisin sauce, rice vinegar, rice wine, and finely chopped garlic in a bowl.
  5. 5. Pour the marinade over the chicken wings.
  6. 6. Turn the wings so they are completely coated with the sauce.
  7. 7. Cover the dish and place it in the refrigerator for at least 6 hours.
  8. 8. Ideally, let the wings marinate overnight.
  9. 9. Preheat the oven to 180 degrees.
  10. 10. Turn off the convection fan and use only top and bottom heat.
  11. 11. Line a baking sheet with baking paper.
  12. 12. Take the wings out of the marinade and place them on the prepared tray.
  13. 13. Bake the wings in the oven for about 30 minutes.
  14. 14. Take the dish out of the oven occasionally.
  15. 15. Brush the wings with the remaining marinade.
  16. 16. Slice the spring onions into small rings.
  17. 17. Sprinkle the finished wings with the spring onions.
  18. 18. Serve the chicken wings hot.
