🍽️ Chicken Fillets in Saltimbocca Style

Ingredients
- 4 chicken breast fillets (approx. 160 g each)
- 3 tbsp olive oil
- 200 g mozzarella
- 8 sage leaves
- 8 slices Parma ham
- salt
- pepper (from the mill)
- 100 ml dry white wine
- 60 g garden cress (for garnish)
Instructions
- 1. Preheat the oven to 200 degrees Celsius. Set the heating function to top and bottom heat.
- 2. Thoroughly wash the chicken breast fillets. Pat them dry with a kitchen towel. Cut each fillet in half crosswise to create two thinner slices. Gently pound the meat slices flat so they are evenly thin. Heat 2 tablespoons of oil in a pan. Fry the chicken slices briefly on each side until lightly browned. Remove the meat from the pan and place it on a baking sheet lightly greased with oil.
- 3. Slice the mozzarella into thin pieces. Top each chicken slice sequentially with one slice of Parma ham, one fresh sage leaf, and about two slices of mozzarella. Season everything with some pepper and a pinch of salt.
- 4. Place the topped baking sheet into the hot oven. Bake the chicken slices for about 8 minutes until the cheese has melted and the surface is baked golden brown.
- 5. Take the pan in which you fried the meat and deglaze it with white wine (pour wine into the hot pan to lift the caramelized residues from the bottom). Let the liquid reduce briefly to concentrate the flavor.
- 6. Wash the cress. Remove any wilted stems or leaves (trim). Dry the greens, for example in a salad spinner.
- 7. Arrange the dry cress as decoration on the serving plates. Place the finished Saltimbocca chicken slices on top. Drizzle the chicken with the reduced white wine jus from the pan. Serve the dish immediately.
