🍽️ Honey-Lime Chicken with Fruity Mango Sauce

Ingredients
- 4 chicken breast fillets (skinless, and possibly with wing bone)
- 1 tbsp honey
- 1 untreated lime (finest strips of the peel and juice)

- 1 tbsp olive oil
- 1 shallot (chopped)

- 2 red chili peppers (seeded and cut into small pieces)

- 2 ripe mangoes (peeled and cut into small pieces)
- 1 tbsp honey
- 2 tbsp fresh cilantro (chopped)

- pepper (from the mill)
Instructions
- 1. Mix honey, lime zest, lime juice, cayenne pepper, and garlic in a bowl to create a marinade.
- 2. Place the chicken fillets in the marinade and let them marinate for about 20 minutes.
- 3. Preheat the oven to 200 degrees.
- 4. Remove the chicken fillets from the marinade and place them on a baking sheet.
- 5. Bake the fillets in the preheated oven for about 15 minutes until golden brown.
- 6. Finely chop the shallot and garlic and sauté them in hot olive oil until translucent.
- 7. Add chili peppers, lime zest, and lime juice and let the mixture simmer for about 5 minutes.
- 8. Add mango, honey, and coriander, stir everything together, and cook for another 2 to 3 minutes.
- 9. Season the sauce to taste with salt and pepper.
- 10. Plate the baked chicken fillets and serve with the mango sauce.
