🍽️ Cheesy Chicken Breast Pockets

Ingredients
- 4 chicken breast fillets (approx. 120 g each)
- 80 g dried tomatoes (packed in oil)
- 125 g mozzarella
- 1 tbsp freshly chopped basil
- 150 g hard cheese in slices (e.g. Gruyère)
Instructions
- 1. Turn on the oven and set it to 200 degrees Celsius fan-forced to preheat.
- 2. Rinse the chicken breasts briefly under running water and then pat them completely dry with a kitchen towel.
- 3. Cut a pocket into the thickest side of each breast, being careful not to cut all the way through to the other side.
- 4. Drain the tomatoes well from the can or jar and then chop them finely.
- 5. Cut the mozzarella into small, even cubes.
- 6. Mix the chopped tomatoes, mozzarella cubes, and basil together in a bowl.
- 7. Season the filling with a pinch of salt and freshly ground pepper to taste.
- 8. Carefully stuff the tomato and mozzarella mixture into the pockets you cut into the chicken breasts earlier.
- 9. Wrap a piece of mozzarella around each stuffed breast so that the filling stays inside.
- 10. Secure the cheese wrapping with kitchen twine so it does not unravel during baking.
- 11. Place the chicken breasts on a baking sheet lined with baking paper.
- 12. Put the tray in the preheated oven and bake the breasts for 15 to 20 minutes until golden brown.
- 13. Remove the chicken breasts from the oven and carefully remove the kitchen twine.
- 14. Cut the breasts in half or into strips as you prefer and serve them warm.
