🍽️ Chicken Burgers with Fresh Herb Quark

Ingredients
- 400 g chicken breast fillet
- 1 shallot
- 10 g grainy mustard (1 tsp)
- 1 egg
- 20 g breadcrumbs (2 tbsp)
- salt
- pepper
- 2 tbsp vegetable oil
- 1 tomato
- 1 avocado
- 40 g arugula (1 bunch)
- chives
- 50 g Gorgonzola
- 80 g low-fat quark (4 tbsp)
- 4 light rolls
Instructions
- 1. Rinse the chicken breast fillet under cold water and pat it dry with a kitchen towel.
- 2. Finely chop the meat or push it through a meat grinder.
- 3. Peel the shallot and dice it finely.
- 4. Mix the minced meat with the shallots, the mustard, and the egg.
- 5. Knead the breadcrumbs into the meat mixture.
- 6. Season the mixture with salt and pepper.
- 7. Shape four equal-sized burgers from the dough mixture.
- 8. Heat some oil in a frying pan.
- 9. Fry the burgers on both sides for 6 to 8 minutes until golden brown.
- 10. Wash the tomato and slice it into thin rounds.
- 11. Peel the avocado, halve it, and remove the pit.
- 12. Cut the avocado into wedges.
- 13. Wash the arugula and dry it in a salad spinner.
- 14. Wash the chives and shake them dry.
- 15. Cut the chives into fine rings.
- 16. Mash the cheese with a fork until crumbly.
- 17. Mix the mashed cheese with the quark and the chives.
- 18. Halve the buns.
- 19. Top the bun bottoms with arugula, avocado, and tomato slices.
- 20. Place the fried burgers on top of the vegetables.
- 21. Add a dollop of herb quark to each burger.
- 22. Close the burgers with the bun tops.
