  1. 1. Rinse the chicken breast fillet under cold water and pat it dry with a kitchen towel.
  2. 2. Finely chop the meat or push it through a meat grinder.
  3. 3. Peel the shallot and dice it finely.
  4. 4. Mix the minced meat with the shallots, the mustard, and the egg.
  5. 5. Knead the breadcrumbs into the meat mixture.
  6. 6. Season the mixture with salt and pepper.
  7. 7. Shape four equal-sized burgers from the dough mixture.
  8. 8. Heat some oil in a frying pan.
  9. 9. Fry the burgers on both sides for 6 to 8 minutes until golden brown.
  10. 10. Wash the tomato and slice it into thin rounds.
  11. 11. Peel the avocado, halve it, and remove the pit.
  12. 12. Cut the avocado into wedges.
  13. 13. Wash the arugula and dry it in a salad spinner.
  14. 14. Wash the chives and shake them dry.
  15. 15. Cut the chives into fine rings.
  16. 16. Mash the cheese with a fork until crumbly.
  17. 17. Mix the mashed cheese with the quark and the chives.
  18. 18. Halve the buns.
  19. 19. Top the bun bottoms with arugula, avocado, and tomato slices.
  20. 20. Place the fried burgers on top of the vegetables.
  21. 21. Add a dollop of herb quark to each burger.
  22. 22. Close the burgers with the bun tops.
