  1. 1. Season the chicken breast fillets with salt, pepper, and thyme.
  2. 2. Heat olive oil and butter in an oven-safe pan. Brown the chicken breast fillets on one side. Turn the fillets and place the pan in the hot oven (180 degrees). Finish cooking the meat for about 10 minutes.
  3. 3. Wash the arugula, remove the tough stems, and sort through it.
  4. 4. Remove the cooked chicken breast fillets from the pan and slice them diagonally into strips. Deglaze the pan drippings with vinegar and wine. Reduce the liquid slightly and distribute it on pre-warmed plates. Arrange the chicken breast strips and arugula on top.
