🍽️ Tender Chicken Breast in Herb Foil Packets

Ingredients
- 2 shallots
- 1.5 lemons (1 in organic quality)
- 1 bunch parsley
- 4 sprigs oregano
- 2 tbsp olive oil
- 200 ml classic vegetable broth
- 1.5 tbsp yogurt butter
- salt
- pepper
- 600 g chicken breast fillet (4 chicken breast fillets)
- 250 g whole grain pasta (e.g. tagliatelle)
Instructions
- 1. Peel the shallots and cut them into fine cubes.
- 2. Squeeze the juice from one half of the lemon.
- 3. Cut the remaining lemon into wedges and set aside.
- 4. Rinse the parsley and oregano under running water.
- 5. Let the herbs drain well in a sieve.
- 6. Pluck the leaves from the stems and chop them coarsely.
- 7. Heat the olive oil in a small pan.
- 8. Sauté the shallot cubes for about two minutes.
- 9. Add the lemon juice, vegetable broth, butter, and chopped herbs to the pan.
- 10. Bring the sauce to a boil.
- 11. Season the sauce with salt and pepper.
- 12. Rinse the chicken breast fillets under running water.
- 13. Pat the fillets dry with kitchen paper.
- 14. Cut the fillets horizontally in half.
- 15. Season the chicken pieces on both sides with salt and pepper.
- 16. Place four sheets of aluminum foil (each approx. 30 x 40 cm) on the work surface.
- 17. Fold the edges of the foil sheets upwards to form small bowls.
- 18. Place two halved chicken fillets in each foil tray.
- 19. Distribute the herb sauce evenly over the chicken pieces.
- 20. Fold the two long sides of the foil over the filling.
- 21. Fold the seam over several times to seal it.
- 22. Also fold in the side openings of the packets firmly.
- 23. Bring water to a boil in a large pot and salt it.
- 24. Cook the pasta according to package instructions in the boiling salted water until al dente.
- 25. Heat a grill pan strongly on the stove.
- 26. Place the foil packets on the hot grill pan.
- 27. Cook the packets on the grill for 8 to 10 minutes.
- 28. Alternatively, preheat the oven to 200 degrees Celsius.
- 29. Cook the packets in the oven for 20 to 25 minutes.
- 30. Drain the pasta and let it drip dry.
- 31. Arrange the pasta on the plates.
- 32. Carefully open the foil packets.
- 33. Place the chicken breast fillets along with the sauce on top of the noodles.
- 34. Serve the lemon wedges as a side.
