  1. 1. Peel the shallots and cut them into fine cubes.
  2. 2. Squeeze the juice from one half of the lemon.
  3. 3. Cut the remaining lemon into wedges and set aside.
  4. 4. Rinse the parsley and oregano under running water.
  5. 5. Let the herbs drain well in a sieve.
  6. 6. Pluck the leaves from the stems and chop them coarsely.
  7. 7. Heat the olive oil in a small pan.
  8. 8. Sauté the shallot cubes for about two minutes.
  9. 9. Add the lemon juice, vegetable broth, butter, and chopped herbs to the pan.
  10. 10. Bring the sauce to a boil.
  11. 11. Season the sauce with salt and pepper.
  12. 12. Rinse the chicken breast fillets under running water.
  13. 13. Pat the fillets dry with kitchen paper.
  14. 14. Cut the fillets horizontally in half.
  15. 15. Season the chicken pieces on both sides with salt and pepper.
  16. 16. Place four sheets of aluminum foil (each approx. 30 x 40 cm) on the work surface.
  17. 17. Fold the edges of the foil sheets upwards to form small bowls.
  18. 18. Place two halved chicken fillets in each foil tray.
  19. 19. Distribute the herb sauce evenly over the chicken pieces.
  20. 20. Fold the two long sides of the foil over the filling.
  21. 21. Fold the seam over several times to seal it.
  22. 22. Also fold in the side openings of the packets firmly.
  23. 23. Bring water to a boil in a large pot and salt it.
  24. 24. Cook the pasta according to package instructions in the boiling salted water until al dente.
  25. 25. Heat a grill pan strongly on the stove.
  26. 26. Place the foil packets on the hot grill pan.
  27. 27. Cook the packets on the grill for 8 to 10 minutes.
  28. 28. Alternatively, preheat the oven to 200 degrees Celsius.
  29. 29. Cook the packets in the oven for 20 to 25 minutes.
  30. 30. Drain the pasta and let it drip dry.
  31. 31. Arrange the pasta on the plates.
  32. 32. Carefully open the foil packets.
  33. 33. Place the chicken breast fillets along with the sauce on top of the noodles.
  34. 34. Serve the lemon wedges as a side.
