  1. 1. Rub the chicken breast fillets with salt and pepper. Then lightly coat them in flour. Whisk the eggs in a deep plate and season with a pinch of salt and pepper each. Mix the breadcrumbs and pistachios in a second deep plate.
  2. 2. Coat the chicken breast fillets first in the egg mixture and then in the breadcrumb-pistachio mixture.
  3. 3. Heat the oil in a large non-stick pan. Fry the chicken breast fillets in it for about 12 minutes on all sides. Let them drain briefly on kitchen paper.
