🍽️ Baked Chicken Strips with Brussels Sprouts, Apples, and Goat Cheese

Ingredients
- 300 g fresh Brussels sprouts
- salt
- 500 g chicken breast fillet (ready for cooking)
- 2 ripe apples (e.g., Boskop)
- 1 tbsp lemon juice
- 2 shallots
- 4 sprigs thyme
- 2 tbsp olive oil
- pepper (from a grinder)
- 150 ml vegetable broth
- 200 g goat cheese (in a block)
Instructions
- 1. Preheat your oven and switch on the grill function.
- 2. Thoroughly wash the Brussels sprouts.
- 3. Bring a pot of salted water to a boil.
- 4. Cook the Brussels sprouts in it for 10 to 12 minutes until tender-crisp.
- 5. Drain the Brussels sprouts.
- 6. Rinse it with cold water to stop the cooking process.
- 7. Let the Brussels sprouts drain well.
- 8. Wash the chicken breast.
- 9. Pat the meat dry with a kitchen towel.
- 10. Cut the meat into thin strips.
- 11. Wash the apples.
- 12. Quarter the apples.
- 13. Remove the core.
- 14. Cut the apple pieces into thin wedges.
- 15. Drizzle the apples with lemon juice immediately to prevent browning.
- 16. Wash the thyme.
- 17. Shake the thyme dry.
- 18. Peel the shallots.
- 19. Slice the shallots into thin strips.
- 20. Heat the oil in a large pan.
- 21. Sear the meat on all sides over high heat.
- 22. Add the Brussels sprouts to the pan.
- 23. Add the shallots to the pan.
- 24. Add the apples to the pan.
- 25. Sauté the vegetables and apples briefly.
- 26. Stir in the thyme.
- 27. Season everything with salt and pepper.
- 28. Deglaze the mixture with the broth.
- 29. Simmer everything over medium heat for approx. 5 minutes.
- 30. Slice the goat cheese.
- 31. Distribute the cheese slices over the chicken and vegetable mixture in the pan.
- 32. Place the pan under the preheated oven grill.
- 33. Gratin the cheese for approx. 5 minutes.
- 34. Remove the pan from the oven.
- 35. Grind fresh pepper over it and serve the dish.
