  1. 1. Rinse the chicken breasts under running water.
  2. 2. Pat the meat completely dry with a kitchen towel.
  3. 3. Cut the chicken meat into small, even cubes.
  4. 4. Peel the garlic clove and chop it very finely.
  5. 5. Slice the chili pepper into thin rounds.
  6. 6. Finely grate the outer peel of the lime to get the zest.
  7. 7. Squeeze the juice out of the lime.
  8. 8. Stir the chopped garlic, ginger pieces, chili slices, coconut milk, lime zest, and lime juice together in a bowl to make a marinade.
  9. 9. Add the chicken cubes to the marinade and mix well so that every piece is covered.
  10. 10. Ideally, pour the mixture into a resealable plastic bag.
  11. 11. Squeeze the air out of the bag and seal it.
  12. 12. Place the bag in the refrigerator and let the meat marinate overnight.
  13. 13. Take the chicken cubes out of the marinade the next day.
  14. 14. Thread the pieces of meat onto wooden skewers one by one.
  15. 15. Drizzle the skewers lightly with some oil.
  16. 16. Season the skewers with salt and pepper to taste.
  17. 17. Preheat the grill.
  18. 18. Place the skewers on the hot grill.
  19. 19. Grill the skewers for 5 to 6 minutes.
  20. 20. Turn the skewers occasionally while grilling so they cook evenly.
