🍽️ Coconut-Marinated Chicken Breast Skewers

Ingredients
- 4 chicken breast fillets (approx. 160 g each)
- 2 garlic cloves
- 1 tsp freshly grated ginger
- 1 chili pepper
- 200 ml coconut milk
- 1 lime (zest and juice)
- sesame oil
- salt
- pepper (from the mill)
Instructions
- 1. Rinse the chicken breasts under running water.
- 2. Pat the meat completely dry with a kitchen towel.
- 3. Cut the chicken meat into small, even cubes.
- 4. Peel the garlic clove and chop it very finely.
- 5. Slice the chili pepper into thin rounds.
- 6. Finely grate the outer peel of the lime to get the zest.
- 7. Squeeze the juice out of the lime.
- 8. Stir the chopped garlic, ginger pieces, chili slices, coconut milk, lime zest, and lime juice together in a bowl to make a marinade.
- 9. Add the chicken cubes to the marinade and mix well so that every piece is covered.
- 10. Ideally, pour the mixture into a resealable plastic bag.
- 11. Squeeze the air out of the bag and seal it.
- 12. Place the bag in the refrigerator and let the meat marinate overnight.
- 13. Take the chicken cubes out of the marinade the next day.
- 14. Thread the pieces of meat onto wooden skewers one by one.
- 15. Drizzle the skewers lightly with some oil.
- 16. Season the skewers with salt and pepper to taste.
- 17. Preheat the grill.
- 18. Place the skewers on the hot grill.
- 19. Grill the skewers for 5 to 6 minutes.
- 20. Turn the skewers occasionally while grilling so they cook evenly.
