  4. 4. Cut the ginger into very fine strips.
  5. 5. Peel the garlic cloves.
  6. 6. Finely chop the garlic.
  7. 7. Wash the chili pepper.
  8. 8. Slice the chili pepper into rings.
  9. 9. Optionally remove the seeds and white membrane of the chili to reduce the heat.
  10. 10. Squeeze the lime to extract the juice.
  11. 11. Peel the papaya.
  12. 12. Remove the papaya seeds with a spoon.
  13. 13. Cut the papaya flesh into thin strips about two centimeters long.
  14. 14. Place the papaya pieces into a bowl.
  15. 15. Mix the papaya with two tablespoons of lime juice.
  16. 16. Wash the herbs.
  17. 17. Shake the herbs dry.
  18. 18. Pluck the leaves from the stems.
  19. 19. Wash the chicken breast.
  20. 20. Pat the chicken breast dry with a kitchen towel.
  21. 21. Slice the chicken breast into strips.
  22. 22. Heat one tablespoon of oil in a wok.
  23. 23. Season the chicken strips with salt and pepper.
  24. 24. Fry the chicken strips in the wok while stirring until browned all over.
  25. 25. Remove the fried chicken strips from the wok and set them aside.
  26. 26. Add the spring onions, ginger, garlic, and chili to the wok.
  27. 27. Fry the aromatics while stirring for one minute.
  28. 28. Add the marinated papaya to the wok.
  29. 29. Continue to fry the papaya for two minutes.
  30. 30. Pour the fish sauce, soy sauce, and broth into the wok.
  31. 31. Bring the sauce to a boil.
  32. 32. Return the chicken strips to the wok.
  33. 33. Cook the chicken while stirring for one minute.
  34. 34. Fold the herbs into the dish.
  35. 35. Serve the dish immediately.
