  1. 1. Dissolve saffron threads in 100 milliliters of warm water.
  2. 2. Peel the onions and chop them very finely.
  3. 3. Wash the coriander and tie it into a bundle.
  4. 4. Wash the chicken and pat it dry.
  5. 5. Cut the chicken into 8 pieces (halve the breasts and legs).
  6. 6. Heat the oil in a large casserole pot or a tajine dish.
  7. 7. Brown the chicken pieces on all sides.
  8. 8. Add the onions and ginger and sauté until translucent.
  9. 9. Add the cinnamon sticks, the saffron mixture, salt, cumin, pepper, and the coriander greens.
  10. 10. Pour in the broth and simmer covered for approx. 45 minutes.
  11. 11. Remove the coriander bundle and cinnamon sticks.
  12. 12. Peel the pears and quarter them.
  13. 13. Remove the core of the pears.
  14. 14. Melt the butter in a pan.
  15. 15. Stir the honey and orange blossom water into the butter.
  16. 16. Add the pears and simmer for 5 minutes, turning them occasionally.
  17. 17. Add the pears to the chicken 5 minutes before the end of the cooking time.
  18. 18. Adjust the seasoning.
  19. 19. Garnish the chicken with coriander and cinnamon sticks as desired.
  20. 20. Serve the chicken with couscous.
  21. 21. Peel the onion and dice it finely.
  22. 22. Peel the carrots and clean them.
  23. 23. Wash the zucchini and clean it.
  24. 24. Cut the onion and carrots into very small cubes.
  25. 25. Bring 500 milliliters of lightly salted water to a boil.
  26. 26. Sauté the vegetables in the butter for 5 minutes.
  27. 27. Place the couscous in a bowl.
  28. 28. Pour the boiling water over the couscous.
  29. 29. Let the couscous swell for 5 minutes.
  30. 30. Fold the vegetables into the couscous.
  31. 31. Season the couscous with nutmeg, salt, and pepper.
  32. 32. Garnish the dish with chopped parsley.
  33. 33. Serve the couscous alongside the chicken.
