🍽️ Chicken Tajine with Couscous

Ingredients
- 1 sachet saffron
- 3 onions
- 1 bunch cilantro
- 1 tsp freshly grated ginger
- 1 chicken (approx. 1, 4 kg)
- 5 tbsp walnut oil
- 3 cinnamon sticks
- salt
- 0.5 tsp cumin (ground)
- pepper (from the mill)
- 250 ml vegetable broth (instant)
- 8 small pears
- 80 g butter
- 3 tbsp honey
- 50 ml orange blossom water
- cilantro (for garnishing)
- 1 onion
- 2 carrots
- 1 small zucchini
- salt
- pepper (from the mill)
- 4 butter
- 400 g couscous (instant)
- nutmeg
- 1 tbsp chopped parsley
Instructions
- 1. Dissolve saffron threads in 100 milliliters of warm water.
- 2. Peel the onions and chop them very finely.
- 3. Wash the coriander and tie it into a bundle.
- 4. Wash the chicken and pat it dry.
- 5. Cut the chicken into 8 pieces (halve the breasts and legs).
- 6. Heat the oil in a large casserole pot or a tajine dish.
- 7. Brown the chicken pieces on all sides.
- 8. Add the onions and ginger and sauté until translucent.
- 9. Add the cinnamon sticks, the saffron mixture, salt, cumin, pepper, and the coriander greens.
- 10. Pour in the broth and simmer covered for approx. 45 minutes.
- 11. Remove the coriander bundle and cinnamon sticks.
- 12. Peel the pears and quarter them.
- 13. Remove the core of the pears.
- 14. Melt the butter in a pan.
- 15. Stir the honey and orange blossom water into the butter.
- 16. Add the pears and simmer for 5 minutes, turning them occasionally.
- 17. Add the pears to the chicken 5 minutes before the end of the cooking time.
- 18. Adjust the seasoning.
- 19. Garnish the chicken with coriander and cinnamon sticks as desired.
- 20. Serve the chicken with couscous.
- 21. Peel the onion and dice it finely.
- 22. Peel the carrots and clean them.
- 23. Wash the zucchini and clean it.
- 24. Cut the onion and carrots into very small cubes.
- 25. Bring 500 milliliters of lightly salted water to a boil.
- 26. Sauté the vegetables in the butter for 5 minutes.
- 27. Place the couscous in a bowl.
- 28. Pour the boiling water over the couscous.
- 29. Let the couscous swell for 5 minutes.
- 30. Fold the vegetables into the couscous.
- 31. Season the couscous with nutmeg, salt, and pepper.
- 32. Garnish the dish with chopped parsley.
- 33. Serve the couscous alongside the chicken.
