🍝 Chicken Pasta with Spinach

Ingredients
- 280 g whole wheat spaghetti
- salt
- 1 clove garlic
- 2 onions
- 1 tbsp olive oil
- 400 g chicken breast fillet
- 1 zucchini
- 500 g spinach
- 30 g parmesan (30% fat in dry matter)
- 100 ml whipping cream
- 100 ml vegetable broth
- 1 tsp lemon juice
- pepper
- nutmeg
Instructions
- 1. Cook the spaghetti in salted water according to the package instructions until al dente (about 10 minutes).
- 2. Peel the garlic clove and the onion and chop them finely. Heat the oil in a pot and sauté the onions and garlic over medium heat for about 3 minutes.
- 3. Pat the chicken dry and cut it into small cubes. Fry the meat in the same pan on both sides over medium heat for about 6 to 8 minutes until golden brown.
- 4. Wash the zucchini and cut it into noodle strands (zoodles) using a spiralizer. Wash the spinach and shake it dry. Add both to the pan with the chicken and cook over low heat for about 2 minutes until the spinach has wilted.
- 5. Grate the Parmesan finely. Deglaze the pan contents with cream, vegetable broth, and lemon juice. Season everything with the Parmesan, salt, pepper, and freshly grated nutmeg. Fold in the cooked spaghetti and serve the pasta on plates.
