🍽️ Crispy Chicken-Ham Rolls with Fresh Salad

Ingredients
- 600 g chicken breast fillet (kitchen-ready)
- salt
- pepper (from the mill)
- olive oil
- 20 slices Serrano ham
- 350 g cherry tomatoes
- 2 spring onions
- 6 mushrooms
- 150 g green beans
- 100 g mixed salad (e.g. arugula, cress, various wild herbs)
- 2 tbsp dark balsamic vinegar
- 1 tsp liquid honey
Instructions
- 1. Rinse the chicken meat under running water and then pat it completely dry with kitchen paper.
- 2. Season the meat with salt and pepper to taste.
- 3. Heat 2 tablespoons of oil in a large frying pan over medium-high heat.
- 4. Fry the meat until golden brown on all sides.
- 5. Reduce the heat and let the meat cook through until it is tender inside.
- 6. Remove the meat from the pan and let it cool down to lukewarm on a plate.
- 7. Cut the cooled meat into wide strips.
- 8. Wrap each strip of meat tightly in a single slice of ham.
- 9. Wash the tomatoes under running water and dry them off.
- 10. Wash the spring onions, cut them in half lengthwise, and divide them into pieces about 8 centimeters long.
- 11. Clean the mushrooms thoroughly and slice them into thin slices.
- 12. Wash the beans and remove any hard ends.
- 13. Bring water to a boil, add some salt, and boil the beans for about 8 minutes (this is called blanching).
- 14. Drain the beans and rinse them immediately with cold water to stop the cooking process.
- 15. Let the beans drain well in a colander.
- 16. Wash the leaf salad, remove any picked leaves, and spin it dry.
- 17. Whisk vinegar, 4 tablespoons of oil, and honey in a small bowl for the vinaigrette.
- 18. Season the vinaigrette finally with salt and pepper.
- 19. Heat 1 tablespoon of oil in a clean frying pan over high heat.
- 20. Fry the chicken-ham rolls sharply on all sides until they are crispy.
- 21. Add the halved tomatoes to the pan and fry them briefly.
- 22. Mix the dry salad with the beans and the spring onion pieces.
- 23. Arrange the salad on plates and drizzle it with the vinaigrette.
- 24. Place the chicken rolls next to the salad on the plate.
- 25. Garnish the rolls with the fried tomatoes and serve the dish immediately.
