🍽️ Marinated Chicken Skewers with Peanut Sauce

Ingredients
- 700 g chicken meat
- 3 garlic cloves
- 2 shallots
- 3 tbsp dark soy sauce
- 3 tbsp sweet soy sauce (Kecap manis, Asian market)
- 1 tsp sambal oelek

- 200 roasted, unsalted peanuts
- 4 tbsp sweet soy sauce (Kecap manis)
- 1 tsp sambal oelek
- 3 tbsp lime juice
- 3 tsp palm sugar
- 3 tbsp peanut oil
- 150 ml coconut milk
Instructions
- 1. Rinse the chicken meat under cold water.
- 2. Pat the meat completely dry with a kitchen towel.
- 3. Cut the meat into approximately 2-centimeter cubes.
- 4. Peel the shallots and the garlic.
- 5. Slice the shallots and garlic into thin slices.
- 6. Mix the two types of soy sauce with the Sambal Ulek (a spicy chili paste) in a bowl.
- 7. Coat the chicken pieces with the marinade.
- 8. Thread the marinated meat pieces onto wooden skewers.
- 9. Place the skewers in a dish.
- 10. Cover the dish.
- 11. Let the skewers marinate in the refrigerator for about 1 hour.
- 12. Finely chop the shallots and garlic for the sauce.
- 13. Pulverize the peanuts in a blender into a fine meal.
- 14. Mix the peanut meal with the sweet soy sauce, Sambal Ulek, lime juice, and sugar.
- 15. Heat the oil in a pot.
- 16. Fry the finely chopped shallots and garlic over high heat.
- 17. Add the peanut mixture to the pot.
- 18. Fry the peanut mixture briefly.
- 19. Deglaze the sauce with the coconut milk.
- 20. Let the sauce simmer vigorously for about 5 minutes while stirring constantly.
- 21. Check the consistency of the sauce.
- 22. Stir in some water if the sauce becomes too thick.
- 23. Preheat the grill.
- 24. Place the skewers on the grill.
- 25. Grill the skewers all around by turning them.
- 26. Grill the skewers for about 10 minutes.
- 27. Serve the finished skewers on a banana leaf.
- 28. Serve the peanut sauce alongside.
