  5. 5. Add a cinnamon stick, coriander seeds, cumin seeds, and Szechuan pepper.
  6. 6. Toast the spices for one to two minutes.
  7. 7. Add the rice to the pan and fry it briefly until translucent.
  8. 8. Deglaze the rice with the broth.
  9. 9. Add a bay leaf to the pan.
  10. 10. Let the dish simmer quietly for about twenty minutes.
  11. 11. Clean the mushrooms and slice them thinly.
  12. 12. Add the mushroom slices to the rice after ten minutes of cooking.
  13. 13. Rinse the chicken meat and pat it dry.
  14. 14. Cut the chicken meat into cubes.
  15. 15. Heat the remaining ghee in a separate pan.
  16. 16. Fry the chicken cubes on all sides for about five minutes.
  17. 17. Season the chicken with salt, pepper, and lime juice.
  18. 18. Finally, adjust the seasoning of the finished rice.
