🍽️ Aromatic Chicken with Rice

Ingredients
- 1 onion
- 4 tbsp ghee
- 1 small piece cinnamon stick
- 0.5 tsp coriander seeds
- 1 tsp cumin seeds
- 0.5 tsp Szechuan pepper
- 250 g long-grain rice
- 500 ml poultry broth
- 1 bay leaf
- 100 g shiitake mushrooms
- 400 g chicken breast fillet
- salt
- pepper
- 1 tbsp lime juice
- coriander leaves (for garnish)
Instructions
- 1. Heat a large pan over medium heat.
- 2. Add two tablespoons of ghee to the pan.
- 3. Peel an onion and dice it finely.
- 4. Fry the onion cubes in the ghee until lightly golden brown.
- 5. Add a cinnamon stick, coriander seeds, cumin seeds, and Szechuan pepper.
- 6. Toast the spices for one to two minutes.
- 7. Add the rice to the pan and fry it briefly until translucent.
- 8. Deglaze the rice with the broth.
- 9. Add a bay leaf to the pan.
- 10. Let the dish simmer quietly for about twenty minutes.
- 11. Clean the mushrooms and slice them thinly.
- 12. Add the mushroom slices to the rice after ten minutes of cooking.
- 13. Rinse the chicken meat and pat it dry.
- 14. Cut the chicken meat into cubes.
- 15. Heat the remaining ghee in a separate pan.
- 16. Fry the chicken cubes on all sides for about five minutes.
- 17. Season the chicken with salt, pepper, and lime juice.
- 18. Finally, adjust the seasoning of the finished rice.
- 19. Set aside the chicken meat.
- 20. Mix the chicken meat into the rice.
- 21. Serve the dish on plates.
- 22. Garnish the dish with fresh coriander greens.
