  1. 1. Preheat the oven to 180 degrees Celsius using the top and bottom heat setting.
  2. 2. Grease a baking dish with a little fat to prevent sticking.
  3. 3. Wash the chicken meat and pat it dry with a kitchen towel.
  4. 4. Divide the chicken into 6 to 8 pieces. You can optionally remove the skin.
  5. 5. Place the chicken pieces into the prepared baking dish.
  6. 6. Peel the onions and cut them into thin strips.
  7. 7. Cut the garlic into very small cubes.
  8. 8. Wash the bell peppers, halve them, remove the seeds, and cut them into strips.
  9. 9. Wash the tomatoes and halve them.
  10. 10. Wash the chili pepper, remove the seeds, and chop it finely.
  11. 11. Distribute all the prepared vegetables evenly over the chicken in the dish.
  12. 12. Dice the sausage and sprinkle the pieces over the vegetables.
  13. 13. Distribute the thyme sprigs or chopped thyme on top.
  14. 14. Pour the wine over everything in the dish.
  15. 15. Drizzle the dish with oil.
  16. 16. Season everything generously with salt and pepper.
  17. 17. Place the dish in the oven and braise for 30 to 45 minutes until cooked through.
