🍽️ Crispy Chicken Nuggets with Oven Fries and Vegetables

Ingredients
- 800 g large, waxy potatoes
- 5 tbsp rapeseed oil
- salt
- pepper
- 1 tsp paprika powder
- 3 tbsp whole wheat flour
- 600 g chicken breast fillet
- 2 eggs
- 80 g whole wheat breadcrumbs
- 400 g corn (frozen)
- 400 g green beans (frozen)
- 2 tbsp butter
Instructions
- 1. Peel the potatoes and wash them thoroughly.
- 2. Cut the potatoes into sticks about 1 cm thick and uniform.
- 3. Place the potato sticks in a colander and rinse them under running water until the water runs clear.
- 4. Put the potatoes in a bowl and pour boiling water over them.
- 5. Let the potatoes soak in the hot water for 15 minutes.
- 6. Drain the water and dry the potatoes well.
- 7. Preheat the oven to 240 °C (convection 220 °C or gas mark 4).
- 8. Toss the dry potatoes with 2 tablespoons of oil, salt, pepper, paprika powder, and 1 tablespoon of flour.
- 9. Line a baking tray with baking paper and spread the fries on it.
- 10. Bake the fries in the preheated oven for 30 minutes.
- 11. Turn the fries once after 15 minutes.
- 12. Wash the chicken breast fillets and pat them dry with kitchen paper.
- 13. Cut the chicken meat into nugget pieces.
- 14. Season the chicken pieces with salt and pepper.
- 15. Dust the chicken pieces with the remaining flour.
- 16. Whisk the eggs in a bowl.
- 17. Put the breadcrumbs in a deep plate.
- 18. Dip the chicken pieces one by one into the whisked eggs.
- 19. Turn the wet chicken pieces in the breadcrumbs.
- 20. Press the breadcrumbs firmly onto the meat.
- 21. Heat the remaining oil in a frying pan.
- 22. Fry the nuggets over medium heat for about 4 to 6 minutes on each side.
- 23. Ensure that the chicken meat is fully cooked through.
- 24. Let the finished nuggets drain on kitchen paper.
- 25. Bring water in a pot to a boil and salt it.
- 26. Cook the corn and beans briefly in the boiling water (blanch).
- 27. Shock the vegetables with cold water and let them drain.
- 28. Heat butter in a frying pan.
- 29. Toss the vegetables one by one in the hot butter.
- 30. Season the vegetables with salt at the end.
- 31. Serve the chicken nuggets with the fries and vegetables on plates.
