🍽️ Chicken breast stuffed with broccoli and wrapped in zucchini

Ingredients
- 600 g chicken breast fillet (4 chicken breast fillets)
- 200 g broccoli florets
- salt
- 40 g crème fraîche (2 tbsp)
- 2 zucchini
- pepper
- 200 ml vegetable broth
- 1 bay leaf
- 4 sprigs thyme
- 2 tomatoes
Instructions
- 1. Rinse the chicken breast fillets under cold running water.
- 2. Pat the fillets dry with a kitchen towel.
- 3. Cut a pocket into the side of each breast fillet.
- 4. Wash the broccoli thoroughly.
- 5. Bring water with salt to a boil.
- 6. Cook the broccoli in it for about 2 minutes until al dente.
- 7. Remove the broccoli from the water.
- 8. Shock it immediately with cold water.
- 9. Let the broccoli drain well.
- 10. Take half a tablespoon of crème fraîche each.
- 11. Spread the crème fraîche into the pockets of the chicken breast.
- 12. Fill the pockets with the prepared broccoli.
- 13. Wash the zucchini.
- 14. Remove the hard ends of the zucchini.
- 15. Slice the zucchini lengthwise into slices about 3 millimeters thick.
- 16. Bring water with salt to a boil again.
- 17. Blanch the zucchini slices for 2 minutes.
- 18. Drain the zucchini.
- 19. Shock the zucchini with cold water.
- 20. Pat the zucchini slices dry.
- 21. Season the stuffed chicken breast fillets with salt and pepper.
- 22. Wrap the fillets with the zucchini slices.
- 23. Pour vegetable broth into a shallow pot.
- 24. Add a bay leaf and two sprigs of thyme to the broth.
- 25. Bring the broth to a boil.
- 26. Place the chicken breast fillets with the seam side down into the broth.
- 27. Reduce the heat to low.
- 28. Simmer the chicken breast covered for 15 to 20 minutes.
- 29. Wash the tomatoes in the meantime.
- 30. Quarter the tomatoes.
- 31. Remove the seeds of the tomatoes.
- 32. Dice the tomatoes.
- 33. Remove the chicken breast from the broth.
- 34. Slice the chicken breast diagonally into thick slices.
- 35. Warm four plates.
- 36. Arrange the chicken slices on the plates.
- 37. Garnish the dish with the tomato cubes.
- 38. Drizzle the chicken with the remaining vegetable broth.
- 39. Sprinkle the dish with the remaining thyme.
