  1. 1. Rinse the chicken breast fillets under cold running water.
  2. 2. Pat the fillets dry with a kitchen towel.
  3. 3. Cut a pocket into the side of each breast fillet.
  4. 4. Wash the broccoli thoroughly.
  5. 5. Bring water with salt to a boil.
  6. 6. Cook the broccoli in it for about 2 minutes until al dente.
  7. 7. Remove the broccoli from the water.
  8. 8. Shock it immediately with cold water.
  9. 9. Let the broccoli drain well.
  10. 10. Take half a tablespoon of crème fraîche each.
  11. 11. Spread the crème fraîche into the pockets of the chicken breast.
  12. 12. Fill the pockets with the prepared broccoli.
  13. 13. Wash the zucchini.
  14. 14. Remove the hard ends of the zucchini.
  15. 15. Slice the zucchini lengthwise into slices about 3 millimeters thick.
  16. 16. Bring water with salt to a boil again.
  17. 17. Blanch the zucchini slices for 2 minutes.
  18. 18. Drain the zucchini.
  19. 19. Shock the zucchini with cold water.
  20. 20. Pat the zucchini slices dry.
  21. 21. Season the stuffed chicken breast fillets with salt and pepper.
  22. 22. Wrap the fillets with the zucchini slices.
  23. 23. Pour vegetable broth into a shallow pot.
  24. 24. Add a bay leaf and two sprigs of thyme to the broth.
  25. 25. Bring the broth to a boil.
  26. 26. Place the chicken breast fillets with the seam side down into the broth.
  27. 27. Reduce the heat to low.
  28. 28. Simmer the chicken breast covered for 15 to 20 minutes.
  29. 29. Wash the tomatoes in the meantime.
  30. 30. Quarter the tomatoes.
  31. 31. Remove the seeds of the tomatoes.
  32. 32. Dice the tomatoes.
  33. 33. Remove the chicken breast from the broth.
  34. 34. Slice the chicken breast diagonally into thick slices.
  35. 35. Warm four plates.
  36. 36. Arrange the chicken slices on the plates.
  37. 37. Garnish the dish with the tomato cubes.
  38. 38. Drizzle the chicken with the remaining vegetable broth.
  39. 39. Sprinkle the dish with the remaining thyme.
