🍽️ Juicy Chicken with Thyme and Lemon

Ingredients
- 1 Chicken (approx. 1,2 kg)
- 1 handful Thyme
- 4 unpeeled Lemons
- 4 Garlic cloves
- Salt
- Pepper (from the mill)
- 4 tbsp Olive oil
- 2 tbsp Honey
Instructions
- 1. Preheat the oven to 180 degrees Celsius fan-forced.
- 2. Wash the chicken thoroughly and pat it dry with kitchen paper.
- 3. Pluck some fresh thyme leaves off the stems.
- 4. Gently push the thyme leaves under the chicken skin.
- 5. Cut the lemons into large chunks.
- 6. Peel the garlic cloves.
- 7. Season the inside of the chicken with salt and pepper.
- 8. Stuff the chicken with the garlic cloves, the thyme (keep four sprigs aside), and half of the lemon chunks.
- 9. Place the remaining lemon chunks into a baking dish.
- 10. Place the stuffed chicken on top of the lemons in the dish.
- 11. Season the outside of the chicken with salt and pepper.
- 12. Drizzle the chicken with olive oil.
- 13. Distribute the four reserved thyme sprigs over the chicken.
- 14. Roast the chicken in the oven for about one hour.
- 15. Pour a little water into the dish occasionally to prevent drying out.
- 16. Continue roasting the chicken for the last ten minutes until golden brown.
