  1. 1. Preheat the oven to 180 degrees Celsius fan-forced.
  2. 2. Wash the chicken thoroughly and pat it dry with kitchen paper.
  3. 3. Pluck some fresh thyme leaves off the stems.
  4. 4. Gently push the thyme leaves under the chicken skin.
  5. 5. Cut the lemons into large chunks.
  6. 6. Peel the garlic cloves.
  7. 7. Season the inside of the chicken with salt and pepper.
  8. 8. Stuff the chicken with the garlic cloves, the thyme (keep four sprigs aside), and half of the lemon chunks.
  9. 9. Place the remaining lemon chunks into a baking dish.
  10. 10. Place the stuffed chicken on top of the lemons in the dish.
  11. 11. Season the outside of the chicken with salt and pepper.
  12. 12. Drizzle the chicken with olive oil.
  13. 13. Distribute the four reserved thyme sprigs over the chicken.
  14. 14. Roast the chicken in the oven for about one hour.
  15. 15. Pour a little water into the dish occasionally to prevent drying out.
  16. 16. Continue roasting the chicken for the last ten minutes until golden brown.
