  1. 1. Rinse the orange under hot water and pat it dry.
  2. 2. Finely grate the orange peel and squeeze out the juice.
  3. 3. Wash the thyme sprigs and shake off excess water.
  4. 4. Strip the thyme leaves from the stems.
  5. 5. Crush the spices in a mortar.
  6. 6. Mix the crushed spices with the thyme, orange peel, orange juice, and olive oil to form a marinade.
  7. 7. Wash the chicken thighs and pat them dry.
  8. 8. Split the chicken thighs at the joint into two pieces.
  9. 9. Coat the chicken pieces with the marinade.
  10. 10. Let the chicken pieces marinate covered for approx. 2 hours.
  11. 11. Place the chicken pieces on the hot grill.
  12. 12. Grill the chicken pieces until golden brown, turning occasionally, for approx. 10 minutes.
